Cuisinart Hollandaise 4 egg yolks 1/2 teaspoon salt 2 tablespoons freshly squeezed lemon juice 1 dash Tabasco 1/2 cup butter (one stick) 1. Place a book or cutting board under the back end of the Cuisinart to make the ingredients tip forward in the bowl. Put egg yolks, salt, lemon juice & Tabasco into a Cuisinart and blend together for about 3 seconds. 2. Place butter in a small pan, and heat over medium heat until bubbling hot. It must be bubbling or the eggs won't thicken. Turn on the Cuisinart and slowly pour the hot butter through the feed tube. 3. The sauce will thicken. Serve immediately. If for some reason the sauce doesn't thicken it will need more heat: transfer the hollandaise back into the butter pan and heat over low heat while whisking constantly until desired thickness is reached. If sauce becomes too thick then thin with small amounts of water. |
