Shrimp & Mango Salad    (printer friendly)

Shrimp & Mango Salad1 lb shrimp, in shells
1 ripe mango, diced small
1 large ripe tomato, diced small
1 jalapeno, diced
1/2 red onion, diced small
1/4 cup chopped cilantro

2 tablespoons fresh lime juice
1 tablespoon olive oil
1 tablespoon honey
salt and pepper

1. Bring a large pot of salted water to a boil. Add shrimp and cook until bright pink and cooked through (2-3 minutes). When shrimp are cooked, drain and place in ice water to cool. Drain well, shell and place in a large bowl. Add the mango, tomato, jalapeno, onion and cilantro and toss gently to combine.

2. For the dressing, combine the lime juice, olive oil and honey. Pour over salad and toss again to combine. Season to taste with salt and pepper. Let marinate 1-2 hours in the fridge before serving; if the salad produces too much liquid, strain off some before serving (or serve with a slotted spoon).
