Gram B's Pierogi    (printer friendly)



Gram B\'s PierogiPastry (makes 3 batches--enough for 4 fillings):
3 1/2 cups sifted flour
1/2 cup butter
1/3 teaspoon baking powder
1/2 teaspoon salt
2 eggs, beaten (plus more for sealing)
1 cup sour cream

Potato Filling:
1 pound boiled potatoes
1/2 pound grated cheddar cheese
salt & pepper

Cabbage Filling:
1/2 head of cabbage, finely chopped
1/2 cup chopped onion
4 tablespoons butter
salt & pepper

Mushroom Filling:
2 tablespoons butter
1/2 pound finely chopped mushrooms
1/2 cup finely chopped onions
1/4 cup half & half
salt & pepper
1/8 cup chopped parsley

Fruit Fillings:
1 cup assorted dried fruits (apricots & prunes are great)



Pastry:
1. Sift dry ingredients together. Cut in butter. Mix in eggs and sour cream and stir until smooth, but not too stiff.
2. Roll out 1/8 inch thick and cut into 2 x 2 inch squares.
3. Fill with 1 teaspoon of filling. Brush edges with beaten egg. Fold pastry over filling to form a triangle and pinch edges together firmly to seal.
4. Set on floured towels or wax paper.
5. Fill pot with water and add 1 tablespoon salt. Bring to a boil.
6. Carefully drop pierogi into water and cook 3 minutes. Remove and drain in colander. Pour cold water over to stop cooking.
7. Drain pierogi well and place on buttered wax paper.
8. Once they are thoroughly dry, you can place in paper bags and freeze.
9. To serve, fry pierogi in butter and serve with sauteed onions and sour cream.

Potato Filling:
1. Mash all ingredients together and season with salt and pepper.
2. Cool before using.

Cabbage Filling:
1. Saute onion in butter until soft. Add cabbage and saute until soft. Season with salt and pepper.
2. Cool before using.

Mushroom Filling:
1. Saute onion in butter until soft. Add mushrooms and saute until all liquid is absorbed.
2. Stir in half and half and season with salt and pepper.
3. Simmer until cream is absorbed. Stir in parsley.
4. Cool before using.

Fruit Fillings:
1. Cut fruit into 1/4 inch pieces and place in saucepot (if using more than one type of fruit, make each fruit in a different pot).
2. Add just enough water to cover fruit and simmer until soft and water evaporates.
3. Mash fruit and cool before using.
