makes about 2 dozen
1/2 cup vegetable oil
4 squares unsweetened chocolate, melted
2 cups granulated sugar
2 teaspoons vanilla
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup confectioner's sugar
1. Mix oil, chocolate and granulated sugar in a medium bowl. Blend in 1 egg at a time, beating till well mixed. Add vanilla.
3. Sift together flour, baking powder and salt. Stir dry ingredients into oil mixture.
4. Chill several hours or overnight.
5. Preheat oven to 350°F.
6. Roll dough into balls and then roll in powdered sugar. Place far apart on a greased baking sheet, as they really spread. Bake 10-12 minutes--do not overbake! (They're kind of like brownies that way-it's a bit hard to tell when their done).
